Cooking with vegetables

The healthiest recipes on the web

The Worst Vegetarian Ever

Me with a furry friend in St. Tropez

I hate vegetables! For years I have tried to force myself to like them but it was excruciating. The reality is that I am stubborn and disaffected and despite the fact that I am a nurse and a vegetarian for 10 years as well as  fully-aware of the wonderful health benefits, I never truly overcame my aversion. Then one day I stumbled across a life-changing recipe book originally targeted for mothers of toddlers and picky eaters. I learned that with a little effort and deception, the vegetable eating process can be tolerated -even enjoyable- when you prepare (and if you have picky eaters, disguise) them in a sneaky and clever ways. Ever since then, I’ve been happily sneaking vegetables into meals I make for my friends and family.

I know that it’s not always easy to make healthy choices, but the way I see it, it’s not an option because it all comes down to respect for your yourself, your loved ones, and for living things. My goal is to inform and motivate you to make healthy vegetarian food a priority. This blog will provide you with simple and healthy vegetarian recipes (No salads, ever, I promise!) along with all of the information that you need to know about the nutrients that you need in a meat-free diet.
